Purposes of food additives
Preservation:
To prevent food from spoiling by inhibiting the growth of bacteria, molds, and yeasts, or by preventing oxidation.
Flavor and appearance:
To enhance or add flavor, texture, or color to food. Examples include sweeteners, flavor enhancers, and food colorings.
Nutrient fortification:
To add back nutrients lost during processing or to enhance the nutritional value of a food, such as adding vitamin D to milk or folic acid to grain products.
Processing:
To aid in the manufacturing, processing, or storage of food, such as emulsifiers that keep oil and water mixed or anti-caking agents.
