The Fish Course

Gefilte Fish (Ashkenazi): Poached fish cakes, served cold with horseradish. Invented to serve fish without bones on Shabbat, when removing bones was considered work.

Chraime (Sephardic/Moroccan): Fish in spiced tomato sauce with Moroccan paprika, chili, garlic, and cumin. Served warm. One of the great Israeli Shabbat dishes that has crossed community boundaries.

Cholent is uniquely Jewish. Partially cooked before Shabbat, placed in the oven Friday afternoon, it slow-cooks overnight and is served at Saturday lunch.
